Whole Grain Goodness


  • 1 Darjeeling tea bag
  • 300g soft dried fruit such as apricots, prunes, apples etc
  • 175g soft brown sugar
  • 2 medium eggs, beaten
  • 225g wholemeal plain flour
  • 1tsp baking powder
  • 1tsp mixed spice


  1. Grease and base line a 1kg loaf tin.
  2. Soak the tea bag in 300ml boiling water for 5 minutes. Roughly chop the fruit and add to the tea, discarding the tea bag and soak for 2-3 hours.
  3. Preheat the oven to 180oC, gas mark 4.
  4. Mix in the sugar and eggs.
  5. Mix together the flour, baking powder and mixed spice and fold into the fruit mixture.
  6. Pour into the prepared tin and bake for 1½ hours or until firm to touch and a skewer comes out clean.
  7. Allow to cool slightly before slicing.
